Weekend Edition : Mini No Bake Pumpkin Spice Cheesecake Recipe

One of my favourite things to make for guests are different versions of mini mason jar cheesecakes. Somehow I've come to enjoy experimenting with the recipe to create new versions for upcoming holidays.
I've gotten them down to a fine science and to whip up 6 mini cheesecakes takes 20 or so minutes.
For those of you looking for something delicious to make for Thanksgiving this might be the best recipe I've come up with yet.
I always seem to do everything for Thanksgiving at the very last minute... I think I mentioned that in my post last year about table settings (here). But this year I'm prepared and very excited to eat these little guys.

This is so cute! I think I am going to give it a try. My two littles would love this! Where did you get the mini mason jars?

Thanks Paige! I found my mini mason jars at Canadian Tire but if you’re in the states you can typically find them at any big grocer or hardware store. I think they’re supposed to be for jam or relish.
